Manual harvest and grape selection, 80 Percent de-stemmed, transferred to temperature-controlled tanks, long period of fermentation to allow the maximum extraction of phenolic, tannins, anthocyanin, structure, colour and health giving benefits while still retaining finesse. Maturation for 12 months in foudre allow for refinement of structure to obtain a perfect balance.
