“During the early 1960s, after completing my viticulture and enology studies in France, I wanted to put into practice what I had learned in Dijon. At a small winery in Pontons, a mountainous area where the nights are very cold, I first fermented grapes at a low temperature to obtain a fresher and more aromatic white wine. This fortunate discovery provided the basis for what is now Viña Sol, which we continue to make with utmost care to this day, half a century later.” M. A. Torres

Villa Maria Maria Pinot Grigio 75cl
Villa Maria Private Bin Pinot Grigio Wine is new Zealand white wine. It is grown on free draining soils comprised of silt and sand. The vines were cropped low, allowing ripe flavours to fully develop in the fruit. It goes well with fresh seafood, chicken or white meat. A fantastic alternative to Sauvignon Blanc, its moderate alcohol and approachable style make it a great food wine.
It destemmed and crushed, gentle pressing was then employed to avoid excessive skin contact. The juice was cold settled then racked clear and inoculated for ferment. Cool fermentation techniques were employed to promote aromatics and delicacy. The individual ferments were tasted daily and stopped once the desired residual sugar level was achieved. Regular lees stirring for two months was undertaken in tank to enhance texture. The wine was then blended, gently fined, cold stabilised and filtered prior to bottling.
